- Green Beans – 1 cup (Cut into 1″ piece)
- Beetroot – 1/2 cup (Peeled & Cubed)
- Rice – 1 1/2 cups
- Turmeric powder – 1/2 tsp
- Cinnamon stick – 1
- Cashews – few
- Coconut oil – 1 tbsp
- Water – 3 cups
- Salt – to taste
To grind:
- Coriander seeds – 1 tbsp
- Fennel seeds – 1/2 tsp
- Black pepper – 1 tsp
- Marati moggu – 1
- Cardamom – 1
- Clove – 2
- Star Anise – 1
- Mint leaves – 6
- Kalpaasi (Black stone flower) – 1 small piece
Get Started:
- Soak rice for 30 mins
- Heat oil in a pan and add cinnamon stick & cashews and let it fry for few seconds.
- Add the veggies, turmeric powder, little salt and let it cook covered for few minutes.
- Once the veggie are 50% cooked, add soaked rice, ground masala powder, enough salt, 3 cups water and let it come to a boil.
- Reduce the flame to low and let it cook covered until done.
Green Beans and Beetroot rice is ready! Enjoy it with any raitha.
