Green Beans & Beetroot rice

Green Beans Beetroot Rice
  • Green Beans – 1 cup (Cut into 1″ piece)
  • Beetroot – 1/2 cup (Peeled & Cubed)
  • Rice – 1 1/2 cups
  • Turmeric powder – 1/2 tsp
  • Cinnamon stick – 1
  • Cashews – few
  • Coconut oil – 1 tbsp
  • Water – 3 cups
  • Salt – to taste

To grind:

  • Coriander seeds – 1 tbsp
  • Fennel seeds – 1/2 tsp
  • Black pepper – 1 tsp
  • Marati moggu – 1
  • Cardamom – 1
  • Clove – 2
  • Star Anise – 1
  • Mint leaves – 6
  • Kalpaasi (Black stone flower) – 1 small piece

Get Started:

  • Soak rice for 30 mins
  • Heat oil in a pan and add cinnamon stick & cashews and let it fry for few seconds.
  • Add the veggies, turmeric powder, little salt and let it cook covered for few minutes.
  • Once the veggie are 50% cooked, add soaked rice, ground masala powder, enough salt, 3 cups water and let it come to a boil.
  • Reduce the flame to low and let it cook covered until done.

Green Beans and Beetroot rice is ready! Enjoy it with any raitha.
