French Green Lentil Paruppu Usili

Serves: 3

Ingredients : (Visit English – Tamil – Hindi translation/ஆங்கிலம்-தமிழ் மொழி பெயர்பு)

  • Steamed Vegetable – 1/2 cup (I chose Banana Flower)
  • Mustard seeds – 1/8 tsp
  • Ghee – 1/2 tsp
  • Olive oil – 2 tsp
  • Salt – to taste

To Grind(into a coarse paste):

 

  • French Green Lentil – 1/2 cup (Dry roasted and soaked overnight with 2 tbsp Red Lentil/Masoor Dhal)
  • Turmeric powder – 1/4 tsp
  • Fresh ginger – 3″ piece
  • Cumin seeds – 1/2 tsp
  • Ajwain – 1/8 tsp
  • Fennel – 1/2 tsp
  • Asafoetida – a pinch
  • Curry leaves – 10
  • Salt – to taste

 

Get Started

  • Steam the ground paste by splitting into small dumplings for 15 minutes.
  • Let the dumplings cool a bit and then crumble it lightly.
  • Heat oil/ghee in a pan and add mustard seeds.
  • Once the mustard seeds pop, add steamed vegetable, crumbled mixture, little salt and saute.
  • Cook it covered in low flame for 5 mins.
  • Switch off the flame, add olive oil and mix gently.

Tasty and healthy Paruppu usili is ready!

Enjoy it as a side dish for sambar, rasam or curd rice.

Note:

Dry roasting lightly and soaking the lentil is recommended for better digestion.
