Sweet Potato & Green Beans Biryani with Dandelion Greens Raitha

Serves: 2

Ingredients: (Visit English – Tamil – Hindi translation/ஆங்கிலம்-தமிழ் மொழி பெயர்பு)

  • Basmati Rice – 1 1/4 cups (soak for 20-30 mins)
  • Peeled and cubed Sweet Potato/Sweet Yam – 1 1/2 cups
  • Cut Green Breans – 1/2 cup (Cut into 1″piece)
  • Roasted Cashews – few
  • Green chilly – 1
  • Ghee – 1 tsp
  • Olive oil – 2 tsp
  • Salt – to taste

Masala mixture:

  • Homemade Masala Powder – 2 tsp
  • Coriander powder – 1/2 tsp
  • Cumin powder – 1/4 tsp
  • Stone Flower/Kalpaasi – 1 small piece
  • Mint leaves – 10
  • Yogurt – 2 tbsp

Get Started:

  • Heat ghee in a pan and add sweet potatoes, green beans, green chilly and cook in medium flame for 2-3 minutes.
  • Then add soaked rice and masala mixture and saute for a minute.
  • Now add 3 cups water, salt and mix well.
  • Let it come to a brisk boil.
  • Cook it covered in low flame for 20 mins or till the rice is completely cooked.
  • The add olive oil, roasted cashews & mix gently.

Healthy and tasty Biryani is ready!

Dandelion Greens Raitha

Serves : 2

Ingredients: (Visit English – Tamil – Hindi translation/ஆங்கிலம்-தமிழ் மொழி பெயர்பு)

  • Finely chopped Dandelion Greens – 1 cup
  • Finely chopped cilantro – 1/2 cup
  • Beaten Yogurt – 1 cup
  • Cumin powder – 1/2 tsp
  • Black pepper powder – 1/4 tsp
  • Turmeric powder – 1/8 tsp
  • Salt – to taste

Method:

  • Heat a pan and add dandelion greens, powdered spices, little water and cook till the greens turn bright green and the raw smell goes off.
  • Add salt and let it cool down completely.
  • Then cilantro and this mixture to yogurt and mix well.

Healthy & tasty Dandelion Greens Raitha is ready to serve!

Note:

  •  Dandelion greens are rich is Calcium and Magnesium. It is quite bitter but with the Sweet potato biriyani, the taste is well-balanced.
  • Sweet Potatoes(Sweet Yam) pacifies Vata and Pitta but aggravates Kapha.
  • Cooked Green beans are Tridoshic.
  • Basmati Rice could be substituted with 50% Quinoa and 50% Rice. In that case, quinoa should be dry roasted, soaked overnight and then used. This helps to remove the toxic substance present in Quiona and also enhances the flavor.
