Kudampuli Snap Peas Spiced Rice
Kudampuli Flavored Snap peas Podi Saadham

Serves: 2

Ingredients: (Visit English – Tamil – Hindi translation/ஆங்கிலம்-தமிழ் மொழி பெயர்பு)

  • Samba Rice or Basmati Rice – 1 cup
  • Thinly sliced Sugar Snap Peas – 2 cups
  • Dried Kudampuli/Garcinia Cambogia – 1 (Soak in warm water and squeeze the juice)
  • Mustard Seeds – 1/2 tsp
  • Toasted Pine nuts – 2 tbsp
  • Cumin seeds – 1/2 tsp
  • Turmeric Powder – 1/4 tsp
  • Asafoetida – a pinch
  • Ghee – 1 tbsp
  • Salt – to taste

To dry roast & Grind (Masala Powder):

  • Coriander seeds – 2 tsp
  • Channa Dhal – 1 tsp
  • Urad dhal – 1/2 tsp
  • Black Pepper – 1 tsp
  • Cumin seeds – 1/2 tsp
  • Cinnamon – 1″ stick
  • Clove – 1
  • Black Cardamom seeds – 4 (Just the seeds)
  • Star Aniseed – a small piece
  • Curry Leaves – 4

Get Started:

  • Boil Rice with salt and let it cool down a bit to become fluffy.
  • Heat ghee in a pan and add mustard seeds.
  • Once the mustard seeds splutter, reduce the flame to low and add cumin seeds, asafoetida, turmeric and saute for few seconds.
  • Then add sliced snap peas and cook it covered in medium flame till the veggie turn soft and well cooked. (Stir occasionally to avoid burning)
  • Then add Kudampuli/Garcinia Cambogia juice, salt and mix well. (Add little water to avoid sticking to the bottom of the pan)
  • Cook it covered till the raw smell goes off.
  • Now add this veggie kudampuli mixture and masala powder to the rice and mix gently.
  • Finally add toasted pine nuts and give a gentle mix.
