Manathakkaali Vathal Kuzhambu

Choose organic ingredients whenever possible

Serves: 3

Ingredients: (Visit English – Tamil – Hindi translation/ஆங்கிலம்-தமிழ் மொழி பெயர்பு)

  • Sweet Tamarind Water – 1/2 cup (Squeezed from a 3 ” pc sweet tamarind)
  • Dried unsalted Manathakkaali/Black Nightshade – 1 tbsp
  • Curry leaves – 5
  • Mustard seeds – 1/8 tsp
  • Turmeric Powder – 1/8 tsp
  • Asafoetida – a pinch
  • Ghee – 2 tsp
  • Salt – to taste

To Dry roast and grind:

  • Channa dhal – 1/2 tbsp
  • Black pepper – 3/4 tsp
  • Toor dhal – 1 tsp
  • Coriander seeds – 1 tbsp
  • Cumin seeds – 1/2 tsp
  • Fenugreek seeds – 1/4 tsp
  • Poppy seeds – 2 tsp

Get Started:

  • Dry roast and grind the ingredient given under “To roast and grind” into a fine powder and mix it with tamarind water.
  • To the mixture, add tamarind water, turmeric powder, salt, and keep it aside.
  • Heat ghee in a pan and add mustard seeds and manathakkali vathal.
  • Saute it in low flame till the seeds pop and the vathal is nicely fried.
  • Then add curry leaves, asafoetida and saute for few seconds in low flame.
  • Add tamarind mixture, 1 cup water(or as needed to make a semi-gravy consistency) and mix well.
  • Cook it covered on low flame till the raw smell turns aromatic.
  • Switch off the stove and garnish it with finely chopped cilantro.

Yummy Manathakkaali Vathal kuzhambu is ready!
