Mixed Veggie Wrap with Garcinia Chutney

Mixed Veggie Wrap with Garcinia Cambogia Sauce

Makes: 4 medium-sized wraps

Ingredients : (Visit English – Tamil – Hindi translation/ஆங்கிலம்-தமிழ் மொழி பெயர்பு)

  • Whole Wheat Roti – 4
  • Finely chopped veggies – 1 1/2 cups(I used carrots, green beans, sweet corn, cabbage)
  • Toasted Slivered Almonds – 1 tbsp
  • Ghee – 2 tsp + 1 tsp
  • Finely chopped Cilantro – 2 tbsp
  • Salt – to taste

For Sauce/Chutney:

  • Dried Garcinia Cambogia/ Kudampuli – 1 (Soak in warm water for atleast 2 hrs)
  • Fennel Bulbs – 1/4 cup (Finely chopped)
  • Chopped Celery – 1/4 cup
  • Coriander powder – 1/4 tsp
  • Cumin powder – 1/8 tsp
  • Cinnamon Powder – 1/8 tsp
  • Turmeric powder – 1/8 tsp
  • Fennel Powder – 1/4 tsp
  • Shredded Fresh ginger – 1 tsp
  • Salt – to taste

Get Started

  • Grind the sauce ingredients into a fine paste and keep it aside.
  • Heat 2 tsp ghee in a pan and add ground paste and saute till the raw smell goes off. (Add little water to avoid sticking to the bottom). Remove from pan and keep it aside.
  • Heat 1 tsp ghee and add the veggies with little salt.
  • Mix well and let it cook covered in medium flame till the veggies turn soft.
  • Switch off the flame and add finely chopped cilantro and toasted almonds.
  • Take a roti and spread a tsp of sauce and add 2 tbsp(or more) of veggies. Roll it up tightly and insert a toothpick to remain sealed or wrap it with an unbleached parchment paper.
