Horsegram Flavored Okra Rice

Horsegram Flavored Okra Rice

Serves: 2

Ingredients: (Visit English – Tamil – Hindi translation/ஆங்கிலம்-தமிழ் மொழி பெயர்பு)

  • Basmati Rice(or sona masoori rice) – 1 3/4 cup (Soak for 30 mins)
  • Okra – 2 cups (Cut into 1″ pc)
  • Sweet tamarind* – 2″ pc (Soak in warm water for 20 mins)
  • Curry leaves – 4
  • Cumin seeds – 1/2 tsp
  • Mustard seeds – 1/8 tsp
  • Turmeric Powder – 1/8 tsp
  • Asafoetida – a pinch
  • Ghee – 1 tbsp + 2 tsp
  • Salt – to taste

To Dry Roast & Grind (Masala Powder):

  • Horse Gram – 1/4 cup (Read its health benefits here)
  • Urad dhal – 1 tbsp
  • Shredded Coconut – 1/4 cup
  • Black Pepper – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Fennel Seeds – 1/2 tsp

Get Started:

  • Boil Rice with 3 1/2 cups of water (if using basmati rice), 2 tsp ghee and let it cool down to become fluffy.
  • Meanwhile prepare the Masala Powder.
  • Heat ghee in a pan and add mustard seeds.
  • Once the seeds pop, add cumin seeds, curry leaves, asafoetida and saute in low flame for few seconds.
  • Add Okra, turmeric powder and cook till the okras turn soft but not mushy.
  • Then add the thick tamarind water, little salt and let it boil till the raw smell goes off.
  • Now on a very low flame, add boiled rice, masala powder, salt and mix gently.
  • Let it cook covered in low flame for a minute.

Yummy, flavorful and healthy Horsegram and Okra Rice is ready!

I paired it with Zucchini & Moong dhal koottu. Its a tasty lunch box recipe.

Note:

  • Pitta people can take this in moderation. Having takra after this meal will help.
  • This rice will be pretty dry. So always have it with some gravy instead of Pappad/Chips.
