“Kothu Parotta” stlye Mixed Vegetable Raagi Paniyaaram | Stir-fried Finger Millet paniyaarams with Mixed Veggies

Serves: 2

Ingredients : (Visit English – Tamil – Hindi translation/ஆங்கிலம்-தமிழ் மொழி பெயர்பு)

  • Raagi Paniyaaram – 20 (recipe coming soon)
  • Chopped Mixed Vegetables – 2 cups (I used Carrot, Green beans, corn, Zucchini, Brussel Sprouts, Fresh green Peas)
  • Finely chopped Beet Greens – 1/2 cup
  • Masala powder – 1/2 tsp (or to taste)
  • Coriander powder – 1/2 tsp
  • Finely chopped Curry Leaves – 1 tbsp
  • Finely chopped cilantro – 2 tbsp
  • Turmeric powder – a pinch
  • Shredded Ginger – 1 tsp
  • Ghee or Oil – 2 tsp
  • Lime – 1 tsp (or to taste)
  • Salt – to taste

For Seasoning:

  • Clove – 2
  • Bay Leaf – 1
  • Green cardamom – 1
  • Star Aniseed – 1 small piece
  • Cinnamon stick – 1″ piece
  • Fennel seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Asafoetida – a pinch

Get Started

  • Heat oil or ghee in a pan and add all the seasoning ingredients.
  • Saute for few seconds in low flame and add the veggies.
  • Add turmeric powder, ginger, little salt, curry leaves and cook till the veggies turn soft.
  • Then add the coriander powder and mix well.
  • Saute for a minute and add chopped paniyaarams, masala powder, little salt and cook this in medium flame for 2-3 minutes.
  • Remove from flame and garnish it with cilantro.
  • Add lime juice before serving.

Healthy and Tasty Mixed Vegetable Raagi Paniyaaram is ready!

Note:

  • Ragi/ Finger Millet pacifies Kapha but aggravates Vata and pitta. This recipe uses mixed veggies which will make this dish tridoshic if had in moderation.
  • Beet Green can be substituted with Spinach, Kale or Swiss Chard.
  • Don’t chop the paniyaarams too small. Just slice each paniyaaram into 4 pieces.
